What are some older games that wouldn't do so well being released today?

I am talking purely about gameplay mechanics and story, not graphics.

What are some older games that if they were to come out today would not do so well because the story or style of gaming mechanics would not be well received?

That's a really interesting topic. When I come back to older games I used to enjoy this tends to happen quite a bit.

I'm going to perhaps be controversial and say the original Pokémon games. I'm talking Red, Blue and Yellow. I revisited it the other year but just couldn't finish it.

I'm not a massive RPG guy so I'm not sure if this is a common phenomena with this genre.

    Custer's Revenge for sure.

Viewer discretion is advised. Really. It's one of those adult Atari games.

Now for the serious answer. (Although the above is certainly valid as such a game would never fly these days.) I think I'll say FMV games in general, if I can do that. There used to be a few good ones and there are actually some modern FMV games that are really good. They're incredibly niche. Not many publishers/developers are willing to invest as it's risky.

If you're not in the know, FMV games are usually like interactive movies. You can change the course of it with some actions, usually a simple multiple-choice mechanic. Some FMV games took it a bit further however, like Night Trap. Unlike most other games I could answer your question with, I'd say that the FMV game genre has aged well because of the advancements in video clarity and technology as a whole. It just doesn't have a big audience. Black Mirror: Bandersnatch has generated some interest in the genre though. Most people wouldn't want to play older FMV games because they're clunky and look quite bad. I hope that FMV games will last a while longer because I do think the games are often hidden gems.

I have a hard time believing that most PSX-era games would be received that well if they came out today. From what we've seen from remasters and re-releases, a lot of the soul is gone and you have newer generations of "journalists" claiming that anything vaguely difficult is the Dark Souls of X. Ape Escape, Silent Hill 1, Resident Evil 1 (not REmake), Castlevania SotN, nevermind the old Final Fantasy/Legend of Dragoon games that don't have boosters or outright cheat options available.
It would also be an issue to a lot of snobs because the story would take priority over graphics or voice work. Completely different era.
