Since there isn't any particular narrative, goal or characters I don't really care to see what it has to offer. I'm not a creative person, so the idea of an endless world in which I must build things is more of a personal Hell than a video game.
The same thing happens to me with some older games that I used to play and that are updated to this day. When I re-visit them I don't have more enjoyment equivalent to the amount of content added. It's very possible that you squeezed it for all it was worth to you. Plenty of MMOs that I dabbled in for a month or two years ago have been updated weekly since then. Upon my return, I just bounce off and don't enjoy it.
Could you return to a box of toys from when you were a kid and still have as much fun playing with them? I'd wager not. It may be intensely nostalgic, but it won't be an engrossing and fun experience like it used to be. That's probably a large part of why I'm such a sucker for JRPGs. Due to their focus on narrative & especially characters/character development, it feels more like revisiting a group of old friends than revisiting an old toybox the way I feel Minecraft is.
