GDC:

An especially good one. The GDC stands for Game Developer Conference. It's a yearly event where big professional game devs get up on stage and give talks about game design, modelling, rendering, animation, storytelling etc etc.
Really good for getting some insight from industry professionals. The GDC channel simply uploads these talks.

Otherwise known as Game Maker's Toolkit, this channel is another favourite of mine and goes in depth on game design analysis, often discussing hidden mechanics and the like used to capture that all illusive 'game-feel'.
There are more but I don't want to clutter up this thread.
And I know of more technical stuff (tutorials on animation, rigging, modelling, sculpting, vfx etc) but I doubt that's what this thread is about.
